GRAPES HARVESTED IN SEPTEMBER, THEN CRUSHED AND JUICE EXTRACTED FOR FERMENTATION AT LOW, CONTROLLED TEMPERATURES,IN STAINLESS STEEL TANKS. MALOLATIC FERMENTATION, PARTIAL OR COMPLETE, DEPENDING ON NATURAL GRAPE ACIDITY. PART OF THE HARVEST IS AGED IN AOK. BOTTLING AFTER 6 OR 8 MONTHS.
It is pleasant in the first years, it can be kept in cellar. it will develop more and more complex aromas which make it one of the most great wines of Burgundy.
Tasting Notes:
