Deen Vat 9 Cabernet Sauvignon 2014
Region- South Eastern Australia
Appearance- Deep purple with crimson hues.
Bouquet- Fragrant cassis, ripe plum and licorice with hints of mint and subtle cedary oak.
Palate- Rich black fruits and sweet plum with fine grain tannins and well integrated oak results in a soft generous wine.
Suggested Cuisine- Enjoy with duck or rabbit.
General Characteristics - Dry / Full Bodied
Vintage Conditions- The lead up to vintage 2012 saw a quite mild growing period accompanied by some rain. The fruit quality obtained was very good despite the challenging weather conditions. Lower than normal yields enabled the fruit to reach flavour maturity before the rains.
Winemaking - Fruit was selected by the winemaker and picked when both flavour and Baume were optimum. Fruit was cold soaked and fermented at 25-32°C for an average of seven days.
